Loaded Keto Broccoli n’ Bacon Salad with Chipotle Lime Mayo

This salad is definitely one of my “go-to” weekly prep meals as it keeps well in the refrigerator for a few days making it the perfect “meal-on-the-run.”  The recipe ingredients below basically serve four to six depending on if you are serving it as a side or the main course.

The “ingredients” below are “generally” measured; this is a “salad” after all!  And once you get a feel for the flavor, I encourage you to get creative with it. Watch your veggie carb percentages!


1 cup broccoli florets, chopped
1/4 cup red onion, chopped
1/4 cup green pepper, chopped
1/2 cup cherry tomatoes, cut into quarters
3 to 4 sliced bacon, cooked to your liking and chopped
1/2 cup bocconcini cocktail balls, cut into quarters


1 to 2 generous tablespoons (or to your liking) Chipotle Lime mayonnaise**
2 tbsp organic apple cider vinegar
1 tbsp dry dijon mustard
1 – 2 tbsp of parmesan / asiago shaker cheese
Himalayan salt
Freshly ground black pepper

Pre-prep all the ingredients.

Steam the chopped broccoli florets for a minute or two – I like them al dante so they have a bit of crunch. Allow to cool down.

In a large bowl, toss the onions, green pepper, tomatoes, bacon and, cheese.  Add in the cooled broccoli, and mix.

In another medium bowl, combine all the dressing ingredients. Season to taste with salt and pepper.

Pour over the salad ingredients and toss until mixed well.

Refrigerate until ready to serve.

Serves 4-6

CRAFT CREATION NOTE:  I love this creation at any time of the day, and add the fresh keto basics when needed, for example:  a tablespoon of flaxseed oil infused with garlic, slices of avocado, an egg sliced, almonds…

This delicious mayo is keto-friendly – high-fat with no sugar and no carbs. It is also dairy and gluten-free.

I use this mayo in a ton of different recipes to add that chipotle zip flavor.

Note — on Amazon the price is running at $20 for 12 ounces, but trust me, it is so worth it.  I have seen it at organic grocers at approximately the same price.

As an alternative, you could buy avocado oil mayo and mix in chipotle spice. I personally prefer the quality craftmanship of this brand.
